Rum Raisin Loaf Cake

The taste of chocolate & loads of raisins with the flavor of rum have made this cake a winning recipe. I was very satisfied with the result after baking this cake for the first time. Hope this recipe will work for you also. 🙂

Rum Raisin Loaf Cake

Ingredients

  • All purpose flour- 1 1/2 cups
  • Cocoa powder- 2 tbsp
  • Baking soda- 1 tsp
  • Baking powder- 1 1/2 tsp
  • A pinch of salt
  • Vegetable oil- 1/3 cup
  • Powdered sugar- 1 cup
  • Freshly brewed strong black coffee- 1 cup
  • Raisins- 1 cup
  • Rum-5 tbsp
  • Vanilla essence- 1 tsp

Method

In a bowl mix the raisins with 5 tbsp of rum & keep aside for 2 hrs. Preheat the oven to 170C. Grease a loaf pan 5-9 inch in size. In a bowl mix flour, powdered sugar, cocoa powder, baking powder, baking soda & salt. Keep aside. In another bowl mix oil, coffee & vanilla essence. Mix in the flour mix with this and blend well. Sprinkle some flour on raisins and add them into the batter, mix gently. Pour the batter in greased or lined cake pan and bake at 170C for 40 to 45 mins, or bake until a tooth pick inserted in the center comes out clean. Cool the cake in the tin for 10 minutes and then turn onto a cooling rack and leave there till cool completely.
