Semiya Pancake/ Vermicelli Pancake

Ingredients

  • Semiya/ vermicelli- 1 cup ( I used roasted vermicelli)
  • Rice flour- ½ cup
  • Yogurt- 1 cup(beaten)
  • Green chili- 2 finely chopped
  • Curry leaves- 4 sprig
  • Salt – to taste
  • Onion- 1(finely chopped)
  • Carrot- 1/4 cup(finely chopped) optional
  • Vegetable oil

Method

In a bowl mix the yogurt with 1/2 cup of water. Add rice flour, salt, curry leaves & green chilies into this. In a plate crush the vermicelli roughly using your hand. Mix this with the prepared batter. Keep aside for 30 minutes. The yogurt gets absorbed by the vermicelli and the batter becomes thick. Heat 2 tbsp of oil in a frying pan(nonstick preferably) and pour a laddle full of the batter in the center. Use the spatula to gently shape the thick mixture into a flat round shape. Spread some oil around the pancake After one side has cooked(let it be light brown in color), flip it over and cook on the other side.

Serve hot with some chutney or pickle.

Note:

While serving to your kids, you can use black pepper powder instead of green chilies.
