Simui er Payesh/Semiya Kheer
- Milk- 1 liter (I used full cream)
- Roasted vermicelli- 150g (broken into small strips)
- Sugar- 100g
- Dry fruits of your choice- ¼ cup (I used raisins, almonds & pistachios)
- Green cardamom- 4-5 (lightly crushed)
Take a deep bottomed pan. Pour the milk in it. Boil on high flame. Once it boils, reduce the heat and add sugar. Stir well, let the sugar dissolves completely in milk. Add the roasted vermicelli. Mix gently with a spatula. Cook uncovered for 2-3 minutes on low flame. Add the dry fruits & cardamoms. Mix again. Remove from heat.
Don’t worry about the thickness of the kheer. Let it be cooled, the semiya will absorb the milk & the kheer will thicken automatically. Serve after cooling or chilled, as u like. Enjoy!
