Apple Pie Muffin

Yield: 18 muffins

Ingredients

  • All-purpose flour- 2 1/4 cups
  • Cinnamon powder- 2 tsp
  • Baking soda- 1 tsp
  • Salt- 1/2 tsp
  • 1 egg
  • Buttermilk- 1 cup (combine plain yogurt 3/4 cup and toned milk 1/4 cup to get homemade buttermilk)
  • Vegetable Oil- 1/2 cup
  • Vanilla essence- 1 tsp
  • Packed brown sugar- 1 1/2 cups
  • Apple – 2 cups, cut into small cubes.

For the topping

  • Packed brown sugar- 1/2 cup
  • All-purpose flour- 1/3 cup
  • Quaker oats- 1/4 cup
  • 3 tablespoons butter, melted

Method

Preheat oven to 190C . Line muffin tins with paper liners or grease well with vegetable oil. In a bowl mix flour, baking soda, cinnamon powder and salt. Keep aside. In another bowl mix brown sugar, oil, buttermilk, egg & vanilla essence. Now add the dry mixture, beat well. No need to over mix. A smooth & fine paste is enough. Add the apple pieces, mix again gently. Now in a small bowl, stir together 1/2 cup of brown sugar, 1/3 cup flour, oats, and melted butter, mix with your fingers till blended. Scoop the batter into the prepared muffin cups, about three fourth full, sprinkle the topping mixture over the tops of the muffins and bake for 25 minutes. After baking transfer the muffins to a cooling rack and leave there till they cool completely.

These muffins are very healthy andΒ rich in taste. They tasted more better on the next day. The crumble topping added an extra taste, my family liked these muffins aΒ lot. They are spicy, moist and very tasty. So what are you waiting for? Bake some now! πŸ™‚

        • Hi Jaya,

          As it’s a cake it may need little more baking time than the muffins, and every oven is different that is one more factor. Anyways cover the top of the cake with aluminium foil loosely if it is browning too much and bake further until done. Yes, you can keep the cake in refrigerator as it is summer. Keep it in fridge after cooling the cake completely.

          • Jaya Thank you! Glad to know that the cake came out good. πŸ™‚ In general we like our cakes to be in room temp. So just take out the cake from fridge 30 mins before serving. The cake can be cut when cold too.
