Dum Aloo Korma
Ingredients
- Potatoes- 12 (small size, peeled & boiled)
- Bay leaves- 2
- Star anise- 1
- Onion- 1 medium size chopped
- Cumin seeds- 1/2 tsp
- Ginger paste- 1 tsp
- Garlic paste- 1 tsp
- Yogurt- 1 cup (beaten)
- Coconut Milk- 1 cup
- Almond powder- 1 1/2 tbsp (grind few almonds in a grinder into a fine powder)
- Cumin powder- 1 tsp
- Coriander powder- 1 tsp
- Kashmiri Mirch powder- 1/2 tsp
- Black pepper powder- 1 tsp
- Green chilies- 4 (slit)
- Garam masala powder- 1/4 tsp
- Vegetable oil
- salt
- Sugar- 1 tsp
- Water
Method
Heat oil in a deep frying pan. Temper with star anise, cumin seeds & bay leaves, stir for 4-5 seconds, add the chopped onions, sauté the onions till light brown in color. Now add garlic paste and sauté for few seconds more . Add green chilies, ginger paste, cumin powder, coriander powder, kashmiri mirch powder & salt. Frying it on medium heat till the masala starts leaving oil. now add 3/4 cup of water, mix & give this a quick boil. Next to add the yogurt & coconut milk. Mix well. Now add the potatoes, mix, cover & cook for 15 minutes. Stir in between. Now add the almond powder, black pepper powder & sugar. Mix & cook for another 5-6 minutes. The gravy will be thicker, so stir in between to prevent from burning or sticking to the bottom of the pan. Add garam masala powder , mix well. Remove from heat.
Serve hot with poori, fulkas, luchi, paratha or roti.
