Winter is knocking at the door. And when I saw this fresh bunch of ‘peyanjkoli’ at my local market, couldn’t stop myself from buying. It’s one of my favorite veggie during winter. Ma used to cook a very simple yet delicious stir fried dish out of this, what we called ‘Peyanjkoli Bhaja’ in Bengali. It’s an easy to cook recipe with very basic ingredients.
Begun die Peyanjkoli Bhaja/Stir fried Onion flower stalks with Eggplant
Ingredients
- Peyanjkoli/Onion flower stalks- 300g
- Begun/Eggplant- 1½ Cups (cut into small cubes, wash and keep aside)
- Turmeric powder
- Salt
- Vegetable oil
Method
Cut onion flowers into 1 1/2 inch pieces (discard the flower buds), wash and keep aside. Mix salt with eggplant pieces.
Heat 2 tbsp oil in a frying pan. Add eggplant pieces and a pinch of turmeric powder. On medium flame stir fry until done. Remove and keep aside.
Now add 2 tbsp oil in the frying pan and add on onion flower stalks (peyanjkoli). Add a pinch of turmeric powder and salt to taste. Mix, cover and cook on medium flame until done. Stir in between. When the onion flower stalks are thoroughly cooked add fried eggplant cubes. Mix and remove from heat.
Serve hot as a side dish with rice and dal.
