Chicken Roast in Desi style

We make Chicken Roast regularly at home. And we experimented with different types of marination for the same. But this Chicken Roast flavoured with Indian spices tastes really awesome each time. Do try it this weekend, and let me know about your experience.

Chicken Roast in Desi style

Ingredients

  • 1 whole chicken- 700g (weight is not restricted for roasting, use bigger or smaller size of chicken as per the availability)
  • Juice of 1 lemon
  • Cumin powder- ½ tsp
  • Coriander powder- ½ tsp
  • Tandoori masala- 1 tbsp
  • Ginger-Garlic paste- 1 ½ tbsp
  • Garam masala powder- ½ tsp
  • Green chilli paste- 1 tsp (adjust according to your tolerance)
  • Mustard oil or melted butter- 1 tbsp (I used mustard oil)
  • Salt

Method

Lightly slit the breast parts of the chicken with a sharp knife, keep aside.

In a bowl mix all the ingredients with Chicken. Rub well. Keep aside for 3-4 hours or more. You can do overnight marination too.

If you are using rotisserie mode of your oven then tie the legs of the chicken with kitchen thread before roasting.

Preheat oven at 200C. Place the chicken in a greased or aluminium foil lined baking tray if not using rotisserie. Grill/Broil the chicken for 50 minutes or until cooked through. Bust the chicken 3-4 times with melted butter in between roasting, this will prevent the chicken from drying out. Check for the doneness with a skewer/knife. Thigh juices will run clear and the inside flesh will become white if it is done.
Remove from oven. Serve immediately with Kasundi, Green chutney whatever you prefer.
