Tea-time Orange Cake

To make these ‘Orange Cakes’ you need few basic ingredients and just one bowl. It is the easiest cake I’ve ever made. The taste of this cake is fresh and full with orange flavour. Remember those bakery style small plain cakes, which we used to buy for munching on tea-time or to take as tiffin for school. This cake has all the texture and taste of those cakes.

Olive oil makes these cakes healthy and a bit low on calories. So, what are you waiting for? Bake a batch of these amazing cakes on this weekend!

Tea-time Orange Cake

Ingredients

  • All-purpose flour/Maida- 1 cup
  • Caster sugar- ¾ cup
  • Olive oil- ½ cup
  • Baking powder- 1 tsp
  • Egg- 2 (at room temperature)
  • Zest of 2 oranges

Method

Prepare a 7” cake pan by greasing with oil and place a piece of baking paper at the bottom of the pan.

In a bowl shift all-purpose flour and caster sugar. Add baking powder, orange zest and oil into this. Whisk with your electronic hand mixer at medium speed for one minute. Now add eggs, one at a time. Whisk well on medium speed for one minute more. No lump should be there. The batter would be thick.

Preheat the oven to 180 C.

Pour this into the prepared cake pan. Smooth the top with the help of spatula. Tap cake pan gently on kitchen counter couple of times to release the air bubbles. Bake for 30 minutes. Do the toothpick test. Insert toothpick in the middle of the cake. Cake is ready if the toothpick comes out clean. If not, bake for few minutes more, and then check again.
Cool the cake in the pan for 10 minutes and then run a sharp knife around the edges of the pan and carefully remove the cake. Turn onto a cooling rack and leave there till cool completely.

When cooled slice, serve and enjoy!

Note:

I made this cake using my muffin pan. That way I got 6 mini cakes. You can do this too.

  1. Made these today and the only addition was i added 1/3 cup of orange juice. The taste and texture was heavenly! Loved it and the cake vanished within minutes.

    Can we make it using Nagpur Oranges? They are greenish and slight orangish in Color but tastes sweet.
