I’ve made these savoury Spiral Cookies with wheat flour to keep our calories in check; they came out so good in taste that it was hard for us to stop at one. That pretty spiral design, which I made with 7 grain protein snacks, is the key factor of these cookies, while the crunches from roasted cumin adds a depth of flavor in it. These are great for any time munching, or you can enjoy them with tea/coffee.

Spiral Cookies made with 7 Grain Protein Snack

Yields: 16-17 cookies

Ingredients

For cookie dough

  • Wheat flour- 1 cup
  • Baking powder- ¼ tsp
  • Unsalted butter- ½ cup (at room temperature)
  • Salt- ½ tsp

For filling

  • 2 packs of 7 Grain Protein Snack
  • Olive oil- 2 tbsp
  • Cumin seeds- 2 tsp

Method

For filling

Dry roast cumin seeds in a frying pan until they turn a bit darker in color. Care should be taken not to burn them. Remove, keep aside.

Add protein snacks in a mixer/grinder, grind until powdered. Take it out in a bowl. Now add olive oil and roasted cumin seeds in the same bowl, mix well. Keep aside.

For cookie dough

Line a tray with cling film, keep aside. Mix flour, salt and baking powder in a bowl. Add butter in it, mix well using your fingers and make smooth cookie dough. Roll this cookie dough on the cling film lined tray in about ¼” thickness.

Now spread the protein snacks mixtures evenly on top of it (check video to see the steps). Start to roll gently from the vertical side. Wrap with cling film and keep refrigerated for 30 minutes.

Line a baking tray with parchment/butter paper. Preheat oven to 180 degree C. Take out the cookie log from refrigerator, cut slices using a sharp knife. Arrange them on the prepared baking tray (keep the cookies 1” apart from one another) and bake for 12-14 minutes or until light golden in color. The cookies will be soft after baking but they will be hardened when cool, so don’t worry about that. Let the cookies cool down for two to three minutes on the baking tray itself. Then shift them onto a cooling rack and leave there until they cool completely. Store the cookies in an airtight container.
