I make stir-fries of different veggies regularly at home to eat with dal and rice. This is one of those dishes. Peyanjkoli/ Onion flower stalks is a seasonal veggie, found in winter-spring mostly, we’re still getting fresh bunches of this green goodness in our local markets. And this Aloo Peyanjkoli Bhaja is one of our favourite dishes among many other things that I make with Peyanjkoli. The recipe is simple, requires very basic ingredients to whip it up in a jiffy.
Aloo Peyanjkoli Bhaja/Stir fry of Potatoes and Onion flower stalks
Peyanjkoli/Onion flower stalks is a seasonal veggie. Aloo Peyanjkoli Bhaja is an easy to cook stir fry, that served as a side dish with dal and rice.
Ingredients
- 250g- Peyanjkoli/Onion flower stalks
- 3- Potatoes medium-sized
- Turmeric powder
- Salt to taste
- Vegetable oil
Instructions

Cut onion flowers into 1½” pieces (discard the flower buds), wash and keep aside.

Peel and cut potatoes into thin slices. Then chop the round thin slices like french fries (little thinner in size than french fries). Wash and keep aside.

Heat 3 tbsp oil in a deep frying pan/kadai and add onion flower stalks (peyanjkoli). Add a pinch of turmeric powder and salt to taste. Mix, cover and cook on medium heat until thoroughly cooked. Stir in between. Remove from heat, keep aside in a bowl.

Heat ¼ cup oil in the same pan. Add potatoes and 1/4 tsp of turmeric powder. Mix and fry on medium heat, add salt when the potatoes are half cooked. Add in stir-fried onion flower stalks when potatoes are thoroughly cooked, mix well. Remove from heat.

Serve hot as a side dish with rice and dal.
