‘Panna Cotta’ is not a Bengali dessert neither it’s Indian, LOL. So what a Bengali mom is doing with ‘Panna Cotta’? Why she made this Italian dessert? Well this Bengali lady just tasted her first ‘Panna Cotta’ last Saturday at Wenger’s, and got completely bowled over with the mild, subtle test and beautiful look of the dessert. And it was on her mind from that day. So what next she made this gorgeous ‘Vanilla Panna Cotta’ within next few days, and served with her own twist, that is in jars.

This heavenly dessert not only look beautiful, but also very easy to make. So presenting an eggless, no bake dessert for this festive season just for you! 🙂

Vanilla Panna Cotta with Strawberries

Serves: 2

Ingredients

For the base

  • Oreo cookies- 6

For Vanilla Panna Cotta

  • Fresh Cream- 200ml (I used Amul Cream)
  • Water- 1/4 cup
  • Gelatin- 1 tbsp (I used Solar’s Instant Gelatin)
  • Caster sugar/white powdered sugar- 2 tbsp
  • Vanilla extract- 1 tsp

For Sugary Strawberries

  • Strawberry- 6 (cut into small pieces)
  • Caster sugar/white powdered sugar- 2 tbsp

Method

For the base grind oreo cookies using a mixer, until a fine mixture forms. Spread this mixture evenly on the base of two serving bowls, glasses, ramekins or jars whatever you are using. Keep it in the refrigerator for minimum 20 minutes. In between make the Panna Cotta.

Mix gelatin with water (the water I used was in room temperature), stir well to make a lump free mixture. Keep aside for 10 minutes. Add cream and sugar in a bowl. On low heat stir until hot, no need to boil the cream. Remove from heat, add the gelatin mixture into this. Mix and stir very well, no lump should be there. Add in vanilla extract. Mix well, now let this mixture cooled completely at room temperature.

Take out the jars from refrigerator. Pour the vanilla mixture equally into the two jars. Wrap the top with cling film, and refrigerate for at least 8 hours, or overnight before serving. As I used instant gelatin, it was set within 30 minutes, what was a real surprise for me.

Make the Sugary Strawberries an hour or 30 minutes before serving. In a bowl just mix the strawberry pieces with sugar. Keep aside for 10-15 minutes. The strawberries will start to release its own juice within this time. Divide this into the jars equally as topping.

Now your ‘Vanilla Panna Cotta with Strawberries’ is ready. Serve these beauties with pride, trust me they taste divine!

    I saw a recipe that is like yours but it was just a hope and to different fruits and then a pudding mixture I didn’t get the measurements for the putting mixture down but it’s similar to what you’re using if you would tell me if you’ve ever made that
