Apple Pie

Pie baking has never happened before in my kitchen. In fact, when an Indian mom is baking or making pie it has to be special, because it’s not among those dishes what we cook regularly to fed our families.

So this pie not only looks special and gorgeous! It also tasted best from all those pies what I ate so far. The crusty outside along with the melting inside, those soft bites of apples and the fragrance of cinnamon…ahhh Heaven!

Serves: 5

Ingredients

For Pie Crust

  • All-purpose flour/Maida- 1 1/2 cups
  • White granulated sugar- 1 1/2 tsp
  • Salt- 3/4 tsp (skip if using salted butter)
  • Unsalted butter, frozen- 1/2 cup/8 tbsp
  • Ice cold water- 4 tbsp

For Filling

  • Medium sized apples- 3 (peeled and chopped)
  • Cinnamon powder- 1 tsp
  • Granulated brown sugar- 2 tbsp
  • Granulated white sugar- 2 tbsp
  • All-purpose flour/Maida- 1tbsp
  • Lemon juice of 1/2 lemon

For Topping

  • Melted butter for brushing the top
  • Granulated white sugar for sprinkling

Method

Making of Pie Crust

Chop the cold butter roughly or grate it using a grater. Chopping was much easier for me, so I did that. In a large bowl add ap flour, salt and sugar. Mix well, add cold butter. Mix well using your fingers, until the flour mixture resembles fine breadcrumbs. Add water and knead the dough well on a lightly floured surface. Divide the dough, forming two equal discs. Wrap the discs using cling film and chill in the refrigerator minimum for 1 hour or more.

Making of the Filling

Toss the chopped apple pieces with lemon juice, keep aside. In a bowl mix all the other ingredients mentioned under ‘for filling’. Mix this mixture well with the chopped apples, keep
aside.

Making of Pie

Take out one disc dough from fridge, on a floured surface roll out the chilled pastry to 1/2 cm thickness. Grease a 20 cm loose bottomed tart tin or pie pan with vegetable oil/olive oil. Use the rolled pastry to line the pie pan. Add the filling into this. Push down the filling and pack it in tightly. Cover the pie with another circle piece of dough or create a lattice top. Roll the other piece of dough on a lightly floured surface to 1/8-inch thick. Cut into 1-inch-wide strips to create the lattice topping for the pie. Brush the top with melted butter and sprinkle some sugar on this. Refrigerate for 30 minutes.

Preheat the oven to 220 degree centigrade. Place the pie into the oven directly from the fridge. Bake for 8 minutes. Reduce the oven temp to 176 degree centigrade. And bake for another 25-30 minutes or until golden on top. Remove from oven. Let it be cooled little bit.

Serve warm with a scoop of Vanilla ice-cream on top or eat just the way it is. Enjoy!
