Our Goa visit in November 2019 was a food trip almost, we used to visit the beaches daily, and ate amazing foods in many restaurants there. From Seafood to home-style Goan Food we tasted as much as we could in 5 days. On the last day of our trip, we went to Margao Market to buy the local food ingredients, Cashew Nuts, and of course Goan Sausages. We bought the sausages from Shop no. 8 & 9 at Margao Market. We were staying at Colva, and we bought some Sausages from a local couple earlier on that day too. They sell their homemade sausages every morning at a roadside stall, a local restaurant recommended them, so we bought some. During our trip, we had this Goan Sausage Pulao 2-3 times from Cota Cozinha, Longuinhos restaurants and fell in love with the lovely flavours and taste of the dish. This was one of the major reasons for buying sausages. Though the sausages add amazing flavour to veg stir-fries and can be a great addition to the filling of Hand Pies, Puffs, etc.
After returning to home I froze the Sausages well. And it was a little happiness to discover some last pieces of sausages in the freezer, I almost forgot that I still had few pieces of these left with me. This recipe works great in this lockdown period when we’re looking for quick one-pot meals every day. If you don’t have Chorizo you can make this recipe with any cold cuts, sausages that are available with you. As told by the restaurant people, they don’t add any other spices to the Pulao because Goan Chorizo is quite spicy. So, if you’re making this Pulao with any other sausage, you can add any spice of your choice. Otherwise, this is a restaurant-style Goan Sausage Pulao recipe that you’ll enjoy making and having. Goan Sausage Pulao / Chorizo Pulao
A restaurant-style, flavourful, hearty, One-pot meal made with Chorizo, this Goan Sausage Pulao is an easy to cook dish that you’d love to make.
Ingredients
- 1½ cups- Basmati Rice
- 200g- Goan Sausages / Goan Chorizo
- 4- Green cardamom (roughly crushed)
- 1″ (3 pieces)- Cinnamon
- 4- Cloves
- 2- Bay leaves
- 1½- Boiled potatoes (medium-sized)
- ¾ tsp- Chilli flakes
- Salt to taste
- 4 tbsp- Ghee/Clarified butter
- 1- Green onion (chopped)
- 1 large- Onion (chopped)
- 10-12- Garlic cloves (chopped)
- 2 tbsp- Fresh coriander leaves (chopped)
Instructions

Wash rice under running water, cook and keep aside.

Discard the threads, sausage casing and take out the meat, roughly chop, keep aside.

Cut the boiled potatoes into cubes, keep aside.

Heat ghee in a frying pan (nonstick preferably), temper with green cardamom, cinnamon, cloves, and bay leaves.

Add chopped onion and sauté until light brown in colour on medium heat. Add chopped garlic, sauté for a few seconds. Add boiled potatoes, sauté until the potatoes look lightly fried (1-2 minutes).

Add the chopped Sausages, mix well and cook over medium heat for 5 minutes, keep stirring in between. The sausage meat will start releasing its own oil at this stage.

Add the cooked rice, salt, chopped coriander leaves, green onion, and chilli flakes. Gently mix everything well, stir & cook for 5-6 minutes.

Remove from the heat, serve hot.
We do not add potatoes in a Goan Chourizo pulao. Its is not Goan Chorizo pulao anymore. Just saying.

1st time I cooked this at home and also 1st time had with potatoes. It added an awesome dimension to the dish, and it was the best Chorizo I had yet. Thanks for the recipe
