Eggless Thandai Madeleines

Thandai is synonymous with Holi. Apart from making the popular Thandai beverage, you can make umpteen things by using the Thandai powder. This powder imparts a significant flavour and taste to the dish. You can try this easy-to-bake Eggless Thandai Madeleines recipe for the Holi celebration, they not only taste great but also made fancy by using melted chocolate and nuts as simple decorating ingredients. Eggless Thandai Madeleines

Try this easy-to-bake Eggless Thandai Madeleines recipe for Holi celebration, they not only taste great but also made fancy by using melted chocolate and nuts as simple decorating ingredients.

Ingredients

  • ¾ cup- All-purpose flour/Maida
  • ¼ cup + 3 tbsp- Caster Sugar/White or Brown powdered sugar
  • 1 tbsp- Thandai powder
  • ½ tsp- Baking soda
  • 1/8 tsp- Salt
  • ½ cup- Buttermilk (read note for substitute)
  • 3 tbsp- Vegetable oil/Olive oil

For Decorating

  • Melted White Chocolate
  • a few drops- Red gel food colour
  • Pistachios/Almonds (chopped) for sprinkling

Instructions

  1. Preheat oven to 180 degrees C. By using a pastry brush grease the grooves of the Madeleine tray with vegetable oil, keep aside.

  2. In a bowl, mix all the dry ingredients (flour, baking soda, thandai powder, salt, and caster sugar).

  3. Now add the wet ingredients to the dry ingredients mixture, whisk well until a lump-free batter forms.

  4. Add 1 ½ tbsp batter to each groove of the Madeleine tray, simply fill each groove halfway up. 

  5. If you’re using a silicone Madeleine tray (I also used the same), keep the silicone tray over another metal baking tray for easy handling during baking.

  6. Tap the tray gently on the kitchen counter a couple of times to release the air bubbles.  

  7. Bake for 20 minutes or until a wooden skewer inserted in the center of one of the Madeleines comes out clean. 

  8. Cool the Madeleines in the tray for 10 minutes and then release them with a spoon gently over a cooling rack, leave there until cool completely.

  9. Bake another batch of Madeleines with the rest of the batter.

  10. You can decorate the Madeleines just the way I did to make them look fancy for the Holi party.

  11. Mix in a few drops of Red gel food colour to the melted White Chocolate, drizzle the chocolate over the Madeleines, and sprinkle some chopped nuts immediately before the chocolate hardens. 

  12. Store the Madeleines in an airtight container, keep refrigerated and consume within 5 days.

If you don’t have Buttermilk, mix ½ tsp White vinegar to ½ cup of cold milk and leave the mixture for 5 minutes. This is your Buttermilk substitute for the recipe
