Old-style Mango Kulfi

Mango Kulfi

A classic summer favorite, this recipe for Mango Kulfi involves reducing milk to create a smooth and creamy dessert.

Ingredients

  • 1 litre- Full cream milk
  • ½ cup- Sugar
  • â…› tsp- Cardamom powder
  • 187g- Mango pulp (ripe)

Instructions

  1. Add 1 litre milk to the non-stick kadai. Boil the milk over high heat.

  2. Once the milk boils, reduce the heat, add the sugar and cardamom powder, mix well. Reduce the milk over low-medium heat until the milk reaches half of its quantity. Keep stirring the milk frequently while it gets cooked.

  3. Remove from the heat, and let the milk cool at room temperature.

  4. Mix in the mango pulp to the cooled milk. You can use an electronic hand blender or a mixer grinder/food processor for easy blending.

  5. Now divide the kulfi mixture into paper cups, or you can use any other moulds, bowls that are available with you.. Wrap the top of the cups with pieces of aluminium foil, and insert wooden popsicle sticks in the middle (watch the video for easy instructions). 

  6. Set the kulfi cups in the freezer overnight.

  7. On the next day, remove the kulfis from the freezer. For unmoulding the kulfis, discard the paper cups by tearing them off, and serve the delicious Mango Kulfis immediately, enjoy!
