Popular Bengali snack Nimkis are shaped like mini croissants. It’s a fun way to make the snacks. The Croissant Nimkis turn out crispy and tasty, and can be stored and enjoyed for weeks (but only if they last that long). These are quite addictive as tea-time snacks and are quirky and great for gifting as well. Make these as a fun addition to your party table spread and surprise the guests. Snacks that are made in an air fryer are much appreciated nowadays. There are several reasons for making snacks in an air fryer. The snacks made in an air fryer use less oil, which reduces the calorie count. As the snacks are being made in the air fryer, you can do other things in between. The compact design of the air fryer speeds up the process, so in comparison to an OTG, the food gets ready in less time. 

However, the traditional way of making Bengali Nimkis is different. And I’ve written a post on it here. A classic snack that is timeless and loved by all. During my childhood, we always had a jar full of nimkis in our home. It was a regular accompaniment with other snacks during our evening tea sessions.

Ingredients

  • 1½ cups- All-purpose flour/Maida
  • 3 tbsp- Wheat flour / Atta
  • Salt to taste
  • ¼ tsp- Kalojire / Kalonji / Nigella seeds
  • 3 tbsp- Vegetable oil

Instructions

  1. In a bowl add the flours, salt and kalojire, mix well.

  2. Add oil to the flour mixture and start mixing until the flour looks crumbly, and while you’d hold some portion of the flour mixture, it holds the shape.

  3. Add water little-by-little and knead a smooth, firm dough.

  4. Divide the dough in small walnut shaped balls.

  5. Grease a surface with oil and start rolling out the balls (watch the video for instructions).

  6. With a pizza cutter, cut the rolled-out disc and mark the triangles.

  7. Start making the mini croissant shaped nimkis by rolling each triangle towards the center of the disc, keep them aside.

  8. Preheat the air fryer to 180 degrees C for 5 minutes.

  9. After it gets preheated, grease the air fryer basket and transfer the nimkis to it gently. Fry the nimkis in batches, and don’t crowd the basket too much.

  10. Air fry the nimkis for 8-10 minutes, or bake until they turn golden and crisp. As the nimkis get cooled they turn out crispier.

  11. After the nimkis get cooled completely at room temperature, store them in an airtight container, and consume within 2 weeks.

  12. Enjoy them any time you prefer.
