Gajar ka Halwa/Carrot Halwa

Ingredients

  • 1 kg- Red carrots/Gajar
  • 6 tbsp- Ghee/Clarified butter
  • ¼ tsp- Salt
  • ½ cup- Sugar (or adjust as per your taste)
  • 5-6 Green cardamom (lightly crushed)
  • 2- Bay leaves
  • ¼ cup sliced- Nuts (cashews, pistachios, and almonds)
  • 3 tbsp- Raisins
  • ¼ cup- Mawa/Khoya (grated)

Instructions

  1. Cut off both ends from each carrot, peel and wash well. Now grate them and keep aside. 

  2. Heat ghee in a deep frying pan (nonstick preferably), temper with green cardamoms and bay leaves. 

  3. Now add the grated carrots and salt. Mix well, cover and cook on low heat, stir in between.

  4. Add sugar, raisins, and nuts when carrots are half cooked. Mix well, cover and cook on low heat until carrots become soft. 

  5. Add grated mawa, mix and remove from the heat.

  6. Serve Carrot Halwa warm, enjoy! 

Recipe Notes

  • We don’t add milk while making Carrot Halwa because we cook this dish with red carrots only, these carrots are juicy and tender, so, we get enough moisture from the carrots itself, but if you want to add milk, add ¾ cup of it at the beginning along with the carrots and cook further.
  • You can make Carrot Halwa with condensed milk as well, then you don’t need to add milk and sugar into it. Adjust the amount of condensed milk according to your preference.
