
Make delicious, flavour-packed Paneer Kathi Roll / Paneer Tikka Roll at home in the simplest way possible by following this quick recipe.
In a bowl, add everything mentioned ‘for marination’ except paneer and veggies, and mix well.
Now, to this marinade add the paneer and veggies, mix well and keep aside for 30 minutes.
Thread the marinated paneer and veggies alternately onto wooden skewers and keep them aside.
Heat a few tablespoons of oil in a tawa, transfer the paneer tikka skewers over the tawa, and keep cooking the skewered paneer and veggies over medium heat from all sides by flipping and rotating the skewers in-between. Cook them until slightly charred and toasted to enhance their flavours. Once finished, take them off the heat, transfer to a plate, and set aside.
Next, heat tawa and prepare the half-cooked rotis with a few drops of oil from both of the sides.
To make the roll, transfer one cooked roti over a surface. Release the cooked paneer tikka and veggies from a skewer directly over the roti in a row (watch the video for better understanding).
Add sliced onions and chopped chillies over them, and squeeze some lemon juice on top. Fold the rotis by drawing its edges towards the center to form a roll. Wrap the roll firmly with a piece of baking paper/butter paper, and secure the paper from one end where you would keep some extra paper to fold inside the roll so that the paper can stay well in place.
Make regular rotis with maida/all-purpose flour for the rolls. You can use atta/wheat flour for a healthy variation, but the overall taste differs when the rolls are made with atta rotis. Store-bought tortillas can also be used to make the rolls.
