Ingredients

  • 110g- Almonds (roasted)
  •  120g- Dates (pitted, read notes)
  • 3 tbsp- Honey
  • Desiccated coconut, for rolling the balls (optional, as required)

Instructions

  1. Roast the almonds lightly, and keep aside to cool.

  2. Add the almonds to a food processor/mixer grinder, and process until powdered.

  3. Next, add the pitted dates and honey, and blitz until everything is well combined.

  4. Transfer the mixture to a plate, and start making the balls by portioning out some mixture. Give the balls round shapes by using your palms.

  5. Roll the balls in desiccated coconut (if using) and transfer them to an airtight container. They are ready to eat now. They keep well for up to one week at room temperature. For a longer shelf life keep the Coconut Dates Balls refrigerated.

Recipe Notes

Use soft dates for this recipe, e.g. Medjool dates. As these dates blend easily, and tastes more delicious in comparison to the other dates varieties.
